Cooking with Honey
Cooking with honey makes food moister and gives it a golden color. Since, honey is sweeter than sugar, you will only need about 3/4 the amount of honey as that of sugar. Even though there are more calories in honey (64 calories per Tsp. of honey vs. 50 calories per Tsp. of sugar), there will be slightly fewer calories (48 calories per 3/4 Tsp.) for the amount of honey used.To replace 1 cup of sugar in a recipe, use 3/4 cup honey and reduce the liquid by 1/4 cup, and decrease the baking temperatures by 25°F.
Honey Butter
  • 1/2 cup butter
 
 
  • 1/2 to 1 cup honey
 
Cream butter well and gradually add honey.
Beat until blended and fluffy.
Honey Muffins
  • 3 cups flour
  • 1/2 cup honey
 
 
  • 3/4 tsp. salt
  • 1/2 cup sugar
 
 
  • 3 tsp. baking powder
  • 3 beaten eggs
 
 
  • 1 cup milk
  • 1/4 cup melted shortening
 
Thoroughly blend milk, honey, and sugar.
Sift together flour, baking powder, and salt.
Combine honey mixture with dry ingredients.
Add eggs and shortening and stir very lightly and quickly.
Bake in well greased muffin times at 375°F for about 20 minutes.Variations:
Add 1/2 cup fruit to batter.
Or, blend 1/2 cup peanut butter with honey before blending with milk.
Or, replace 1 cup of flour with whole wheat flour.
Honey Baked Ham
  • 1 ready-to-eat 10 to 12 lb. ham with the bone
  • 1/2 c. honey
 
 
  • 3 tbsp. Dijon mustard
  • 1 tsp. cinnamon
 
 
  • 1 c. brown sugar
  • 1 1/2 c. apple juice
 
Remove the layer of skin from ham, leaving a thin layer of fat to keep the meat juicy while baking.
Score the surface of the ham into a 1 inch diamond pattern, without cutting into the meat.
Place a whole clove in the center of half of the diamonds.
Brush top of ham with Dijon mustard and place ham in a roasting pan.
Combine sugar, honey and cinnamon; heat over medium heat bring to a boil while stirring until the mixture is pourable, but not thin.
Spread the mixture over the ham.
Pour apple juice into the bottom of roasting pan and roast at 325°F for 1 1/2 hours.
Baste every half-hour using the juices in the pan.
